Southwest Cheeseburger Pasta




1 - 16 oz. box macaroni pasta or penne pasta
1 lb. ground chuck or sirloin
1/4 - 1/2 cup ketchup
1 can tomato soup
2 cans petite diced tomatoes, undrained
chopped onion
chopped/minced garlic (optional)
fresh chopped baby spinach (optional)
1 tsp. crushed red pepper
Pampered Chef Southwestern seasoning 
2 cups shredded cheddar cheese

Cook noodles and drain. Cook beef with onions and garlic. Drain. Add to beef mixture: tomatoes, soup, ketchup, red pepper, salt and pepper. Stir in pasta and spinach. Pour into a baking dish and top with cheddar cheese. Bake at 375 degrees for 20-25 minutes or until cheese is melted and bubbly.

Blondies

1 1/2 cups firmly packed light brown sugar
1 cup unsalted butter
2 1/4 cups self rising flour
2 large eggs
1 tsp. vanilla extract
1 1/2 cups butterscotch or semisweet chocolate chips
chopped walnuts or pecans

Preheat oven to 375 degrees. Melt butter and stir into sugar. Cool to room temp.
Then add eggs and vanilla.  Stir in flour, then chips and nuts. Spoon into a greased 9 x 13 inch dish.  Bake until light brown around the edges and a toothpick inserted in center comes out clean, about 20 minutes.  Cool slightly and cut into squares.
