Kim's Turkey Meat Loaf

1 1/2 lb. 85 percent lean ground turkey (I like butterball brand)
chopped onion
3 minced garlic cloves or freeze dried garlic
1 cup quick cooking dry oats
1-2 eggs
1/4 - 1/3 cup catsup
2 tsp. worchestershire sauce
salt and pepper
dried parsley
*sometimes I add diced red and green bell peppers and chopped fresh spinach

Mix all together by hands and pat into a greased loaf pan.

Mix 1/3 cup catsup, 2 tbsp. brown sugar, and 1 tbsp. yellow prepared mustard and spread over the top of the loaf.

Bake at 350 degrees for 50-55 minutes

Chicken Pot Pie

2 cups cooked chicken
1 can cream of chicken soup
cooked, cubed potatoes and carrots
chopped/grated onion
1/2 cup mild cheddar cheese
ready frozen pie crust for bottom shell
refrigerated pie crust for top
shredded or sliced cheese

Mix, pour into crust. Top with cheese and top crust. Pinch close around edges. Cut 4 slits in top to vent. Bake 25-30 minutes at 425 degrees.

Basil Chicken Lasagna

2 cans cream of mushroom soup
1 container of cottage cheese (16 ounces)
1 jar of roasted red peppers, drained and cut into strips
4 cups chopped cooked chicken
3/4 cup parmesan cheese
1/2 cup chopped fresh basil
pepper
9 no boil lasagna noodles
4 cups shredded italian cheese, divided

Mix soup and next 6 ingredients in a large bowl.  Layer 3 lasagna noodles on bottom of lightly greased 9 x 13 inch baking dish. Spoon and spread one third of the soup mixture on noodles.  Sprinkle with 1 1/3 cups cheese.  Repeat layers three times.
Bake covered at 350 degrees for 40 minutes.  Uncover and bake 15 minutes.  Let stand 10 minutes before serving.

Philly 3-Step Cheesecake

2 - 8 oz. pkgs. cream cheese
1/2 cup sugar
1/2 tsp. vanilla extract
2 eggs
1 ready to use graham cracker crumb crust

1. Mix cream cheese, sugar, and vanilla with mixer. Add eggs; mix until blended.
2. Pour into crust.
3. Bake at 350 degrees for 40 minutes or until center is set.  Cool. Refrigerate 3 hours or overnight.

Before serving, add 1 can of cherry pie filling over the top.

Baked Potato Spears

Potatoes
miracle whip light
onion salt
garlic powder
parm cheese
salt and pepper
parsley

Heat oven to 375 degrees.  Cut potatoes into wedges.  Put in large bowl of ice water for a few minutes.  Drain on paper towels.  Put back in large bowl.  Mix with miracle whip light (just enough to lightly coat) and all of the seasonings, along with the parmesan cheese.
Spray baking sheet and pour potatoes onto tray.  Bake for 25 minutes.  Turn potatoes over and bake for another 20-25 minutes.  Serve with ketchup or honey mustard sauce.

Baked Potato Salad

Leftover baked potatoes, diced
grated onion
sliced green olives
miracle whip light
grey poupon mild and creamy dijon mustard
parsley
white pepper
salt and pepper

Mix all in a bowl and chill.

Sweet Potato Cakes

1 large sweet potato, peeled and grated
1/2 grated/minced small onion
olive oil
salt and pepper
1 egg
1/2 cup flour

Mix potato, onion, salt, pepper, egg, and flour all together.  Heat oil in skillet on med/high heat.  Drop potato mixture in skillet to form small patties. Cook on both sides until done.

Chocolate Drop Oatmeal Cookies

2 cups sugar
1/2 cup cocoa
1/2 cup milk
1 stick butter
1/2 peanut butter
2 cups oatmeal

Stir sugar and cocoa together. Mix sugar, cocoa, milk, and butter in a sauce pan and bring to a boil (1 minute to 1 1/2 minutes) stirring frequently.  Add peanut butter and oatmeal. Mix and let cool for 5 minutes. Drop by spoonfuls onto wax paper.
